A Simple Recipe

Once upon a time, my husband and I used to care-take cattle stations in outback Queensland. Needless to say, it was an incredible experience - one we both loved. We came away with some amazing stories and experiences.

One of the near daily jobs was feeding shearers, musterers and ringers when they came in from a hot, dry and hard day's work: having fast, nutritious and delicious recipes on hand was a must. I picked up many helpful cooking ideas from others and still use these recipes and incorporate these tips into my own cooking today. One of those recipes was an incredibly chewy and delicious but super simple Peanut Butter Biscuit. It only calls for three ingredients and needs about 10-15 minutes cooking time.

Peanut Butter Biscuits

4 x cups crushed cornflakes

1 x 395g tin condensed milk

125g crunchy peanut butter

  1. Preheat the oven to 180°C.
  2. Crush the cornflakes into a large bowl.
  3. Combine the condensed milk and peanut butter in a separate bowl.
  4. Add the crushed cornflakes to the peanut butter mixture and combine well.
  5. Use a tablespoon and roll the mixture into neat balls and place on a greased tray. Make sure you allow room for the biscuits to spread while cooking.
  6. Place in the oven and cook for approximately 12-15 minutes. Watch closely as they can burn easily!
